Typhoon Cravings

 

During Typhoon Bolaven, all I could do was stay home and watch on my phone. But, the only thing I could think of throughout this time was think of this mochi I had at a party a month ago! It was so random but I couldn’t let it go! Then, my mom tracked down the person that made it and the lady was kind enough to share it with me. Once I made it myself, I knew I had to share it with you all, so today I will be sharing how to make cookie butter daifuku! 

Here is a list of the ingredients you need for one serving (10 pieces):

-3/4 cup of mochiko flour

-1/4 cup sugar

-3/4 cup of water

-cookie butter

-tapioca flour (for rolling)

-parchment paper

-cupcake liners

-plastic wrap

For the first step to this recipe, you are going to scoop about 1 tsp. of cookie butter to a lined surface with parchment paper and stick it in the freezer to harden. Next, you are going to combine your mochiko flour, water, and sugar together and mix! Now, you are going to cover the mixture with plastic wrap and stick it into the microwave for 1 minute. Next, you are going to stir and put it back into the microwave for another minute. Repeat this step until you get the right texture! (It should be firm but still sticky) After you get the right texture and once it’s cooled, you will now dust your surface with tapioca flour to roll your dough. Now, you will take a small scooper to get your mixture and roll out your daifuku. Then, insert your cookie butter! And you’re done!
